

A light beer batter makes these fritters delightfully crunchy, and pre-cooking the apples ensures that they are tender to the core and don’t give off excess liquid while frying.
Poached Apple Fritters
4 apples
Apple cider
Peel, core and cut the apples into bite sized pieces. Put them in a pot, cover with cider and bring to a simmer. Allow to cook for 10 minutes. Remove from cider with a slotted spoon and let cool.
1 cup all-purpose flour
1 tsp sugar
1/2 tsp baking powder
1/2 tsp ground cinnamon
1/4 tsp nutmeg
1/4 tsp salt
1 1/8 cup lager, or other light beer
Combine batter ingredients in a bowl. Cover and allow to rest in refrigerator for at least 30 minutes.
Canola or vegetable oil
Flour
In a deep pot, bring several inches of oil to approx 375F.
Dredge apple pieces in a light coating of flour, then dip each piece in batter and fry until it reaches a deep golden brown. Remove with a slotted spoon and drain on a paper towel-lined plate.
Serve while hot.
