July is Culinary Arts Month! When I think of the culinary arts I think of technique, of balance, of timing and seasonality – and being that it’s the middle of summer, I’m drawn to things that are refreshing and simple. This dish may have a few components, but each part is easy to put together – and while each is tasty on its own, they come together in a lovely, refreshing dessert that will simultaneously clean your palate and delight you with its balance of textures and flavours. The tart crunchiness of semi-ripe mango, the chewiness of the coconut jelly and sour iciness of lime granita are lovely especially when accented with the fruity, smoky heat of powdered chiles.
