

Tart, savoury and sticky with a noticeable heat in the finish, this jam is excellent for serving with cheese and pork.
Chili Onion Jam
1 tbsp butter
4 cups thinly sliced onions
1/2 cup grated apple
1/2 cup rice wine vinegar
1 tbsp balsamic vinegar
1/4 cup dark brown sugar
1/4 tsp chili flakes
In a saucepan, melt butter, then sweat onions over medium-low heat until translucent and tender. Add apple, rice wine vinegar, balsamic vinegar, brown sugar and chili flakes. Continue cooking, stirring occasionally, until liquid is evaporated. Let cool.
