Simple ingredients can produce magnificent things. Over the last year my days have gotten busier and busier, and I find myself choosing the easy over the elaborate. This tart uses pre-made puff pastry, but if you have the time you can certainly make your own. Each ingredient brings its own unique qualities to the table: the creaminess of the fresh avocado, richness of the mascarpone, sweetness of red onion and flakiness of puff pastry come together in an intensely rich and quick-to-assemble appetizer. Be sure to top this with a good olive oil (like the Sciabica Sevillano Variety Fall Harvest Extra Virgin Olive Oil I used) and flaky salt – they make a world of difference!
